As of today, “Water & Salt 2023” is bookable!
We’re a little surprised at how quickly time flies.
It feels like we’ve only just had the rehearsal dinner, doesn’t it?
And in recent weeks, we have been wrestling with two decisions that we have been avoiding for a long time.
But you may have already noticed that we always want and need to keep moving at 100/200.
So there are two important changes in our kitchen again.
We look forward to your next visit.

Lunch & Dinner?
Yes, exactly!
We, Sophie and Thomas, love to go out for lunch.
Just like we would in the evening.
Only afterwards, everything is open.
And the impact on the next day is very small (at least in theory).
But so far we haven’t dared to do it.
The feedback on the question of whether you would also be our guests on Saturday lunchtime has been so positive that we will now do it.
Nothing ventured, nothing gained.
For “Water & Salt” we also open at lunchtime on Friday and Saturday!
This also applies to the “Stundentisch” and “Die Empore” on these two days.
So the possibilities are manifold …
Water & Salt 2023 | May 05 to July 15
Fish and seafood.
Or rather: everything from the water.
Plus, of course, vegetables, herbs and other treasures here and there from our now well-stocked culinary quiver.
A very special season indeed.
Also in the sense that we learned last year that quality and availability are not necessarily best in winter.
In fact, we had the most impressive experiences in spring and early summer last year.
Hence the somewhat unusual step of celebrating this topic from May to July.
Because at the end of the day, it’s the reality and not the theory that counts.
“Die Empore” is growing up.
The gallery is our place of absolute freedom.
Here we cook whatever the kitchen has to offer.
And you can come whenever you want.
And it’s great!
However, so far we have only cooked “recommendations”.
If you know us – no problem.
If not, quite a challenge … And now we’re daring to do something unusual here too: the Empore is getting a fixed menu!
Don’t worry, there is still the 100/200.
So there are 3 savory dishes per season, which we say are the essence of the same.
Plus, of course, our brioche and another sweet recommendation. What’s more, we still take the freedom to cook whatever we feel like!
A calendar of events
Last Saturday we celebrated our first champagne lunch in a small and very wonderful group.
It was absolutely wonderful!
And in fact, it didn’t take long for everyone to agree that we should do something like this more often.
That’s exactly how we see it.
So we are now working on a calendar of events for the 100/200, because this place MUST be used in even more diverse ways than we already do.
We will keep you up to date!
The complexity is in the simplicity!

The feedback whether you would also be our guests on Saturday lunchtime, was so positive that we will do so now.

This applies to the “Hourly Table” and “The Gallery” on these days as well.

So there are 3 hearty dishes per season, which are their essence.
