One room, one stove, one chef – Thomas Imbusch minimises fine dining in Hamburg to the bare essentials. The experienced chef reimagined food culture and hospitality for his new restaurant. The perspective being seen and felt from his point of view instead of being connected to a cosy atmosphere, tweezer art, sous-vide poached pork bellies and emotions in the backroom like is customarily is in Michelin star restaurants, something that he chef has decided was not for him anymore. It is significant for him to not just present perfect looking dishes but that his craftwork is authentic, lavish, loud and bold.
To him the kitchen has always been the place where everything takes place.
Therefore, everything at 100/200 revolves around a majestic stove – the elemental fire place – standing proudly in the centre of the room and not hidden behind closed doors.

In the entirely open-plan kitchen chefs will be cooking at 100 °C , the oven heated up to 200 °C. You’ll hear pans sliding over the stove and spoons clinking against the pots will be will be slid over the stove and you will hear the spoons clink against the pots. Simple. Authentic.
